Flash Fried Strawberries in Balsamic Vinegar

Sounds weird but this another one of our favourites as the Balsamic vinegar and black pepper intensify the flavour of strawberries, bringing out their sweetness - tasting is believing.
Works great as both a sweet and savoury dish. Try them on top of a salad with goat cheese, or serve them for dessert over ice cream.
The better the quality of the balsamic vinegar and berries you use, the better this recipe will be.
Important: best to use a thick based non-stick frying pan or a well oiled cast iron frying pan. Drop the grill close to the coals to keep the pan low and close to the hot fire for best results.
Ingredients
1 punnet of strawberries (rinsed, cored, and sliced)
3 tbsps sugar
1 1/2 tbps balsamic vinegar
Black pepper to taste
Method
Place the sliced berries on a plate and sprinkle with sugar, leave for 5-10 mins.
Pour the balsamic vinegar into the hot pan and as the vinegar starts to boil throw in the berries. Quickly push them around with a wooden spoon or spatula to flash fry them for about 1 to 1 ½ mins.
Remove the pan from the fire and add a couple of grinds of coarse black pepper to the berries, and toss to coat.
Allow the flavours to blend for a minute or so and then serve, that's it.
Our favourite is with vanilla ice cream!
Tip: Drop the grill close to the coals to keep the pan low and close to the hot fire for best results. Adding a few twigs or tiny bits of wood to the fire to get small flames heats the cast iron even more. Remember the handle will get very hot - take care!
